A Perfect Harmony of Sweet and Salty

Ingredients

Base

  • 9 Dates, pitted
  • 1/3 Cup raw almonds
  • 4 Tbsp coconut oil

Filling

  • 4 Ripe bandanas
  • 1 Cup coconut cream
  • 4 Tbsp cacao
  • 1 Tsp vanilla extract
  • 4 Tbsp raw honey

Topping 

  • 1 cup whole Raw Almonds
  • 1 Tbsp Honey

Instructions

  1. Preheat oven to 180C
  2. Place almonds in a bowl and coat with honey place on baking sheet with parchment paper for about 10 minutes. Cool and chop roughly or put in thermomix or food processor.  Can store in refrigerator.
  3. For base combine all ingredients and place in food processor for 30 on speed 10 or place in food processor until well combined. Place evenly in silicone cup cake tins and press down firmly.
  4. For Filling combine all ingredients and place in thermomix for 30 on speed 10 or place in food processor until well combined. Pour on top of the base and freeze for 4 hours.

Store all cup cakes until ready to use.

Take out 5-10 minutes before eating and top with almonds.
