Coconut Fudge with Tahini & Black Sesame Seeds

Tahini is made by grinding roasted sesame seeds into a smooth paste, often with added oil for consistency. Sesame seeds and tahini offer numerous benefits due to their nutritional value and potential health advantages. They are rich in essential nutrients, including healthy fats, protein, dietary fiber, vitamins, and minerals.

Sesame and tahini contain antioxidants that neutralize free radicals and reduce inflammation. The healthy fats found in them can support heart health by lowering LDL cholesterol levels. Sesame seeds are also a good source of calcium, promoting strong bones. The dietary fiber in sesame and tahini aids digestion. Tahini’s sesamin compound improves the absorption of certain nutrients, while its low glycemic index makes it suitable for blood sugar control. Sesame seeds and tahini are valuable plant-based protein sources for vegetarians and vegans.

Ingredients

  • 1 can of organic coconut cream
  • 1/2 cup (85ml) organic hulled tahini at room tempperature
  • 2 tablespoons of local honey
  • 1 teaspoon of vanilla extract
  • 1 pinch of salt
  • 2 tablespoons of organic coconut oil
  • 1 teaspoon of black sesame seeds

Optional ingredients:

  • 1 teaspoon of mesquite powder

Instructions

  1. Grease or use silicone pan (6in x6in); line with baking paper if using metal pan extending over the sides.
  2. Process coconut cream, tahini, honey, vanilla, salt, coconut oil and mesquite powder (if using), until mixture is smooth.
  3. Pour into silicone or metal pan and sprinkle top with sesame seeds. Freeze for 2 hours or until set.
  4. Using a knife, cut into squares.
