Ingredients

• ½ cup basmati rice
• ½ cup yellow mung dal (soaked if possible)
• 1 tbsp ghee
• ½ tsp cumin seeds
• ½ tsp mustard seeds

• ½ tsp coriander powder
• ¼ tsp fennel
• Pinch salt
• 4 cups water
• Optional vegetables: diced carrot, zucchini, pumpkin, baby spinach

Instructions

• Warm ghee in a pot and sauté cumin and mustard seeds until fragrant.
• Add turmeric and remaining spices.
• Add rice and mung dal, stirring to coat in the spices.
• Pour in water and bring to a gentle simmer.
• Cook 25–30 minutes or until soft, soupy and creamy.
